Combine the chicken (2 cans) and cheese in a bowl; stir in the salbal oelek, starting with 1 tsp and tasting. Note that if using a fresh bottle, you may want even less. For batches where Anna wants spicy but Andrew does not, use 1/2 tsp. Warm the tortillas a few at a time in the microwave for 30 seconds with a damp paper towel atop.
Spread about 1 heaping tablespoon of the chicken over half of the warmed tortilla. Roll tightly to form the taquito starting at the filled side of the tortilla. Place seamed side down in the baking dish. Repeat with the remaining tortillas. Bake for 30 minutes in the preheated oven.
